It’s great to have hubby off ( he is a teacher ) for the Summer holidays at the moment. We’ve been doing a mega sort-out of all cupboards/roofspace/under-stairs and have been finding many a thing we’ve been looking for!! One thing is this recipe, which is so easy and the biscuits are gorgeous!

8oz plain flour
4oz unsalted butter
2oz sugar
2oz brown sugar
1/2 teaspoon fresh nutmeg
8oz currants soaked and dried
1 yolk of egg
1 tablespoon single cream
1 tablespoon water
few drops vanilla essence


1. Rub butter into flour
2. Add all other dry ingredients and mix
3. Add yolk, cream, water, essence and mix
4. Pat into rounds 2-2 1/2 inches in diameter and 3/4 inches thick
5. Bake in oven for 20-25 mins @180 deg
6. Dust with icing sugar before serving.

Please note that these biscuits are not meant to be of the crunchy variety!
